NY Style Bagels

I LOVE bagels so naturally I was skeptical that whatever I could make would never compete with my favorite bagel shop. Boy was I wrong. The first time I made these was for my mom and dad and they have requested me to make them so many times since! They truly are better than any bagel shop around and they don't take very long. The best part is that these bagels freeze extremely well and when you want to make them again just microwave for 30 seconds and then toast!

Makes 8 bagels

Bake time: 20 min
Rest time: 1 hour
Ingredients:
For the Dough 1 TBS Instant Dry Yeast
1 1/3 Cups` Warm Water
3 1/2 Cups All-Purpose Flour
2 TBS Sugar
2 TSP Salt
Additional Ingredients
Egg wash (1 egg beaten with 1 TBS water)
Any toppings/ fillings you desire (I like everything, chocolate chip, cinnamon sugar, rosemary sea salt)
Directions:
In a Kitchen Aid mixing bowl combine yeast, sugar, and warm water using a dough hook. Set aside for 10 min.
Add in flour and salt, mix on low speed until dough is smooth (about 7 min via mixer or 10 min by hand).
Transfer dough to a lightly oiled mixing bowl. Cover with damp towel. Let rise about an hour, until doubled in size.
Gently punch down dough to release air. Transfer dough to a lightly floured work surface. Evenly cut the dough into 8 equal pieces (it works best to cut the dough in triangles like pizza slices). Carefully, cup the top of a dough ball with your hand and roll the bottom of the dough on the surface to smooth out. Keep the top of the dough facing towards the ceiling the entire time. Repeat the rolling for all of the dough balls.
Transfer dough balls to lightly floured baking sheet and let rise. Meanwhile preheat oven to 425 and start boiling water in a large wide-mouthed pot. Once water is boiling, reduce heat to Medium/Low.
Use your pointer finger and thumb to pinch a hole in the bagel about 1 inch wide. Gently place bagel in he water and boil for 90 seconds per side. Place bagel on baking sheet lined with parchment paper.
Brush bagels with egg wash, sprinkle with desired seasoning. Bake for 20 min
I you choose to use a filling rather than a topping (ex; blueberry) then incorporate the filling into the dough during the kneading process (step 2).
